The experience
Custard, shortcrust pastry, sugar and vanilla pods: these are some of the ingredients necessary for the “creation” of pasticciotto, the most famous Salento dessert. Compared to almond pastries, it has a more recent history in the local confectionery tradition, yet it has managed to excel over its “competitors”, reaching notoriety over the years even overseas.
To succeed, however, the recipe must include another fundamental ingredient: artisanal knowledge, handed down from hand to hand. For this reason, we have chosen one of the best pastry chefs, a renowned representative of the “school of Galatina”, a wonderful town in the heart of Salento where the original recipe was born.
You will be able to accompany him and observe him at work, but he will also accompany you in the various stages of preparation, with the care and love that the creation of your pasticciotto requires.
With this experiential workshop, pasticciotto will no longer be just the dessert that marks the beginning of your stay, as of many travelers in Salento, but will become your personal “madelaine” thanks to which, at a distance of time and kilometers, you can everywhere awaken the memory, even gustatory, of the Salento land.
